  • BBQ Scallops In The Half Shell With Citrus Fruits And White Wine

    What better way to spend a summer’s day than standing outside in the sun with a cold beer in your hand and looking down at a hot barbeque covered in scallops in their half shell.

    Method

    1. Light a barbeque

    2. Whisk the citrus juice, white wine and olive oil together in a bowl.

    3. Add the parsley and mix into the dressing.

    4. Spoon the citrus juice dressing over the scallops and place on a red hot B.B.Q. for 3-5 minutes, depending on the heat of B.B.Q.

    5. Cut each of the fruit segments into 5 pieces, spoon over the scallops and serve

    Serves 4

    Ingredients

    ¼ cup / 50 ml citrus juice
    Generous 1/3 cup / 100 ml white wine
    2/3 cup / 150 ml extra virgin olive oil
    1 tbsp flat leaf parsley, coarsely chopped
    12 cleaned scallops with roe in the half shell
    2 oranges, 2 lemons and 2 grapefruit, segmented
